Chocolate Sunbutter Recipe and Transformation Tuesday

I hope you guys are having a great Tuesday. Ahhhhhh and its Transformation Tuesday, so here is one for you...

The picture on the left is from February of this year. I had gained about 25lbs back from the original 50 I had lost. The picture on the right is from yesterday after having an awesome swim session with my girl and awesome triathlete Alecia. I have lost almost 40lbs since February, while training for the Ironman Augusta swim. Do you have a transformation picture? I would love to see it. Ok so now to my Chocolate Sunbutter Recipe. One of the ways I have lost weight the past couple months is by making some of my own snacks at home. Here is my super easy Chocolate Sunbutter Recipe...

This stuff is delicious...

Ingredients:
2 cups Sunflower Seeds
2 tbsp Carob powder from www.puritans.com (or cocoa powder)
1/4 cup 100% pure local honey (I used Sweetser's Native)
1/4 cup coconut oil

Put your sunflower seeds in a food processor and process until seeds are completely processed. (you will have to stop and scrape side a couple times)...

Add carob powder, honey, and coconut oil...

Process until smooth like peanut butter...(you will have to stop and scrape sides a couple times)

And enjoy...
Super easy and sooooo good. Store in a sealed container at room temperature.

  2. Oh, yummy! I don't use honey, do you think agave or another alternative would work? I love the idea of making my own.

    1. yes of course, you could use anything to sweeten it. It shouldnt change the consistency:) Let me know what worked for you:)
